Oatmeal cookies

A slightly healthier alternative to your average choc chip cookie, well that is what I am telling myself as I tuck into number 2 at 10.30 a.m. It is Monday I guess! They are sugar free, made with wholemeal flour and have oats in them so surely doing me some good?! Really quick and easy will be a good one to whap up post baby when the visitors pop by...

Ingredients:

1 Cup of Oats - I used Rolled oats but quick oats would be fine too

3/4 cup of Wholemeal Flour

11/2 tsps of Baking Powder

11/2 tsps of cinnamon

pinch of salt

Two tablespoons of coconut oil

1 tsp of vanilla

1 egg

1/2 cup of agave

handful of chocolate chips.

Instructions:

Preheat oven to 325 degrees - line your baking tray with parchment paper.

Using two bowls mix together the dry ingredients on one and whisk the wet ingredients together in the other. Add the wet to the dry and stir in the chocolate chips. You don't want to overwork the ingredients. It is quite a sticky mixture or maybe its the Texan heat but i chucked it in the freezer for 10 mins or so and then it was easier to work with.

Using your hands roll out 15 cookie balls on to your baking tray and bake for around 12 mins or less - depending on how gooey you want them! Mine ended up turning out more like Cookie balls - obviously intentional?!

Serve with pretty much anything - cup of tea, warmed up with ice cream, chocolate milk....
