Healthy, quick and easy Banana Bread

Having a newborn is both exhausting and definitely makes for a hungry mama! As I try and get my to my original body shape or there or thereabouts I am trying to make healthy choices when it comes to snacking. It is hard as one handed grabs make toast, chocolate etc the easier option... Whilst these feel like a great option at the time, the low very quickly follows the sugar high. So role in the 'they seem naughty but are nice' scones, healthy chocolate chip cookies and this Banana Bread. It is super tasty but is without the sugar and refined flour found in some banana bread options.

Ingredients:

1/3 cup melted coconut oil

1/2 cup of honey

2 eggs

2 mashed bananas

1/4 cup of coconut milk

1 teaspoon of baking soda

1 teaspoon of Vanilla Extract

1/2 teaspoon of salt

1/2 a teaspoon of cinnamon

1 3/4 cups of Wholewheat Flour

Method:

Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius)

In a large bowl, beat the oil and honey together together with a whisk.

Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 10 seconds in the microwave.)

Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined.

If you’re adding any additional mix-ins, gently fold them in now.

Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
