Super Simple Chocolate Oatmeal Muffins

Its Fat Friday and with that comes another chocolate muffin recipe, slightly revised on the last one. Tried to make it slightly healthier but with just as much tastiness. A great one I think for when you have friends coming round short notice, I had all the ingredients in my cupboard/fridge and literally with the cooking time took me about 40 mins. Hopefully one I can whap out for visitors when the baby arrives...?! #mumagoals
Makes 16 - or 15 if the husband asks when he comes in.
Ingredients:
1.5 Cups of Oat flour (I just blended my Porridge oats to a fine dust)
0.5 Cup of Porridge Oats
1 Teaspoon of Baking Powder
1 Teaspoon of Bicarbonate of Soda
2 Tablespoons of Cocoa Powder
1 Teaspoon of almond or Vanilla essence, to be fair should be Vanilla but last week I picked up Almond essence by mistake...
1 Small courgette grated
1 Ripe banana
0.5 Cup of Dark chocolate chips
3/4 cup of milk or Greek Yogurt
2 Eggs
Method:
Pre-heat Oven to 350 F.
Mix all the wet Ingredients together with a blender insuring the banana is well mashed in the mix, then simple stir in all the dry ingredients and leave for 10 mins for the porridge oats to blend and its that simple, the mix seemed a weird texture not sure if that is the Porridge Oats felt like I should add more liquid but I held off and taste test revealed they are all good, think the courgette keeps them moist.
Put into cup cake bake-ware - I have the silicon ones, sprinkle with a few chocolate chips and bake at 350 degrees Fahrenheit for around 20-25 mins, check with a toothpick to make sure they are cooked all the way through and voila...
