Fat Friday Muffins

Huzzah - its Friiiday!! And to celebrate - I have just made some Chocolate Muffins. Dangerous, I know but feeling a bit meh... so am currently well up for celebrating Friday with wine and chocolate, everybody is allowed a cheat day right?! (Mine has somewhat been a cheat week but hey who's counting).

Inspired by Jamie over at 'My Baking Addition' http://www.mybakingaddiction.com/chocolate-zucchini-muffins/ - I have tried to make mine slightly healthier...

Ingredients (makes 16)

1/2 cup of granulated sugar (so naughty - will try and make again with alternatives to make healthier)

1/2 cup honey

1/2 cup of Coconut Oil

2 1/2 cups of All purpose Flour

1 medium courgette finely chopped

1/2 cup of Cocoa Powder

1 teaspoon of Baking Powder

1 teaspoon of Cinnamon

pinch of salt

2 teaspoons of vanilla essence

3 eggs

1 cup of chocolate chips

Method

Pre-heat the oven at 350 F.

In one bowl i whizzed the coconut oil, vanilla, eggs, honey and sugar together until well mixed.

In a separate bowl I mixed together the flour, cinnamon, baking powder, cocoa powder and salt before sifting in two parts into the wet mixture. Fold in carefully.

Next up I finely grated in the courgette and roughly mixed before adding in the chocolate chips. (You don't want to over mix in order to get some rise from them.

Finally spoon the mixture into silicon Cupcake holders - I sprinkled a few choc chips on top before putting into the oven and bake for 18-20 mins.

Yum yum yum! Never used courgette before in cakes but creates a really nice texture and you don't even notice it is there and surely counts as one of your 5 a day?!
