Food Prep Monday...

Food prep Monday began with making chicken stock from our leftover Sunday Roast... Head to the BBC Good Food Website to get the Recipe:

And from there went on to make a Chicken and Quinoa curry and some soup.

Starting with my curry - I got my inspiration from the delicious recipe from 'A pinch of Yum' http://pinchofyum.com/healthy-quinoa-chicken-curry-bowls#easyrecipe-20623-0 but have made a few alterations due to my fussy child (aka my husband)!

Ingredients (serves 2/3)

Splash of Olive Oil

1/2 an onion

1 Garlic Clove (Texas style - maybe 2 in the UK)

1 teaspoon of finely chopped Ginger

2 teaspoons of Curry Paste ( I use Pataks)

2 cups of Chicken Stock

1 tin of chopped Tomatoes

1/2 a courgette

2 breasts of cooked shredded chicken ( mine was left over from our roast)

1 cup of uncooked Quinoa

Greek yogurt (optional)

Spring Onions (optional)

Naan/ Wholemeal Pitta

Method

Heat Olive oil in pan over a medium heat and add onion and sweat till onions are soft.

Add ginger, curry paste and garlic and cook for 2-3 mins.

Add the remainder of the Ingredients (Tomatoes, shredded chicken, chicken broth, Quinoa and the courgette) to the pan and reduce the temperature so it is simmering for 15-25 mins.

Once you have a stew like consistency - Serve in bowls and add a dollop of yogurt and some spring onions with a side of naan, or wholemeal pitta if you fancy!
